- 1
Preheat the oven to 500°F. Line a sheet pan with tin foil and parchment paper.
- 2
Pat the halibut dry and remove the skin, seasoning with salt and pepper on both sides. Put the seasoned fish onto a plate and pop into the fridge while you prepare your other ingredients.
- 3
In a small bowl, add the butter, Old Bay, onion powder, garlic powder and lemon juice, mixing all of that together until combined and set aside.
- 4
In a large bowl toss the potatoes with 2 tbsp. avocado oil, salt and pepper. Add to one side of the sheet pan.
- 5
Add the corn and polish sausage to the same bowl the potatoes were in, and toss with remaining oil and add in a little more salt and pepper. Add the corn and sausage to the other side of the sheet pan.
- 6
Place in the oven and roast everything for 25 minutes, checking on and mixing everything up half way through.
- 7
Once the time is up, remove sheet pan from the oven, reduce the temp to 425°F and take the corn off, transferring it to a clean bowl and tossing with half the seasoned butter.
- 8
Push the polish sausage to the side with the potatoes and use the other side on your sheet pan for the halibut, baking for another 8-10 minutes or until the internal temp of the fish is 140°F.
- 9
Once done, plate everything as desired and use the remaining butter mixture to top the halibut. Garnish with parsley and enjoy!
