   Spray the inside of the slow cooker with cooking spray.

   In a medium bowl, whisk together egg white and vanilla extract until frothy, about 1-2 minutes.

   Mix in the pecans, granulated sugar, brown sugar and cinnamon. Pour the pecan mixture into the slow cooker.

   Set the slow cooker on low for 3 hours, stirring at the 1- and 2-hour marks. At the 2 ½-hour mark, add water and stir once more.

   Spread pecans out on a baking sheet to cool. Store in an airtight container.
