Ingredients: 2 Tbsp olive oil; 2 slices Primal Eats Venison Bacon, diced; 2 medium onions, divided (1 diced, 1 thinly sliced); 1 medium head red cabbage, shredded; 1 lb + 1 medium apple, peeled, diced, divided; 1 cup water; ½ cup Oktoberfest beer; 2 Tbsp cider vinegar; 1 Tbsp brown sugar; Dash of ground cloves; 2 bay leaves; 2 dashes ground nutmeg, divided; Salt, to taste; Black pepper, to taste; 1 lb potatoes, peeled & diced; 4 Tbsp butter, divided

Ingredients

2 Tbsp olive oil
2 slices Primal Eats Venison Bacon, diced
2 medium onions, divided (1 diced, 1 thinly sliced)
1 medium head red cabbage, shredded
1 lb + 1 medium apple, peeled, diced, divided
1 cup water
½ cup Oktoberfest beer
2 Tbsp cider vinegar
1 Tbsp brown sugar
Dash of ground cloves
2 bay leaves
2 dashes ground nutmeg, divided
Salt, to taste
Black pepper, to taste
1 lb potatoes, peeled & diced
4 Tbsp butter, divided

Instructions

To make rotkraut, heat oil in a skillet. Brown bacon. Add diced onions and saute until tender. Add cabbage, 1 medium diced apple, bacon, water, beer, cider vinegar, brown sugar, ground cloves, bay leaves, dash of nutmeg, salt and black pepper. Simmer, stirring frequently, until cabbage is soft.
Meanwhile, cover potatoes and 1 lb. apples with salted water in a stock pot. Boil for 10 to 15 minutes, until potatoes are tender. Drain. Add 2 Tbsp. butter, dash of nutmeg, salt and black pepper. Mash until creamy and smooth.
Heat remaining 2 Tbsp. butter in a skillet, add sliced onions and fry until browned.
To serve, place potatoes on plates. Top with onions and serve with rotkraut and German Primal Dogs.
